Green Cooking Demo at New Retailer

A Great New Retailer in Historic, Dowtown Scituate, Massachusetts called “The Roman Table” at 164 Front Street is opening soon.  Scituate is a quaint seaside town located approximately 27 miles south of Boston.  Cynthia Gallo-Casey, the owner of “The Roman Table” said they will feature European Tableware,  Ceramics, cookware, table linens, glassware, and Garden ornaments. In addition, she will have olive oils, balsamics, pasta, and other limited products. Finally, the shop will house a demonstraton kitchen for cooking classes and demonstrations.  On Friday evening June 4th Terra Allegra Imports has been invited by Cynthia to demo “Piral” All natural Italian made,”green” terracotta cooking and serving ware.  The Roman Table is one of the newest retailers selling Terra Allegra “green” terracotta ware.  Come on by to meet Cynthia and see Phil of  Terra Allegra Imports prepare a recipe inspired by family memories “White Fish with potatoes and green beans” using all natural terracotta.

White Fish with potatoes and green beans

The simple, vibrant, multiple layers of flavor all in one pan make this one of my favorite family recipes that is relatively easy and quick to prepare.

1 pound of fresh white fish, Haddock, Cod or Pollack cut into 2” pieces

4-5 small gold potatoes cut into 1” cubes

½ lb of fresh green string beans (cut into bite-size length)

4 fresh plum tomatoes chopped

1 onion sliced

(substitute 1 washed, trimmed leek if desired)

2 tablespoons capers drained

12 large green pitted olives sliced

8 ounces of tomato sauce

Juice of ½ fresh lemon

Tablespoon fresh oregano bruised

Freshly ground black pepper to taste

Red pepper flakes to taste

Sea salt to taste

2-3 tablespoons Extra Virgin Olive Oil

Heat 2 tbsp EVOO in a Piral TA272 4.5 Qt. Casserole pan

Add salt, fresh ground pepper and red pepper flakes.

Add chopped potatoes and cook for 3-4 minutes

turning and stirring occasionally.

Add sliced onions (or leeks), capers and olives

cook for 2-3 minutes more.

Add chopped fresh plum tomatoes and continue cooking 3-5 minutes till some liquid is visible in the pan while

continuing to stir occasionally.

Add 8 ounce of tomato sauce.

Add the fresh green beans (cut to bite-size length)

Cook for 5 minutes stirring once

Test doneness of potatoes with a fork, when almost done add the White Fish pushing aside the other

ingredients to allow the fish to rest on the cooking surface of the pan.

Pour or squeeze in fresh lemon juice and add the bruised fresh oregano.

Cover and cook for several minutes more. The fish will cook quickly, the fuel saving, efficient cooking and heat

conductivity of terracotta will allow you to turn the heat off before the fish is done.

Check for doneness after several minutes.
