It’s easy to cook at home ..Video Recipe

Hi, I have written about the many types of uses for Piral, terracotta cookware in this blog. Below is a video of a delicious Grass Fed Braised Beef with leeks and mushrooms and Risotto. Braised beef with leeks and Baby Bella mushrooms
in Dry red wine (such as Merlot or Cabernet) and beef stock
If available, use grass fed beef from a local farm

3/4-1 lb top round beef steak
2 trimmed, cleaned leeks sliced
8-10 sliced Baby Bella mushrooms
1/2 cup diced celery
2 cloves minced garlic
1/2 cup Merlot (room temperature)
1/2 cup warmed beef broth
1/2 cup flour
Freshly grated black pepper to taste
Sea salt to taste
3-4 tablespoons Extra Virgin Olive Oil

Heat 2 tbsp Extra Virgin Olive Oil in Piral Terracotta TA272, 4.5 Qt. Casserole or TA241, 3.5 Qt. Saucepan
Add salt, fresh ground pepper to oil
Add diced celery, sliced leeks & mushrooms cook over low–medium heat 3-4 minutes
While vegetables are cooking place 1/2 cup flour in dinner plate, season with sea salt & fresh ground pepper
Add diced garlic, continue cooking ingredients approximately 3-4 minutes more
Remove cooked vegetable ingredients from pan
Add 2 remaining tablespoons Extra Virgin Olive Oil
Prepare beef, rinse if needed, dry with paper towel
Dredge both sides of beef and edges in flour mixture
Add beef to pan and lightly brown on both sides
Add cooked vegetable ingredients back into pan
Add warmed beef broth and red wine (do not cover meat with braising liquid)
Bring to simmer, lower heat, cover and cook-braising, turn meat after 30 minutes, add more wine or broth if needed cover and cook for remaining 30-40 minutes
Check for doneness by easily breaking a piece off with a fork

Serve with Risotto or Oven Roasted Potatoes and Butternut squash for a superb Autumn dinner.
